After reading several emails and comments I am very clear that everyone wants to see the first mint frosting .... and it was a very good decision is one of my favorites!
is super delicious because when you think the chocolate mint is Sickening evidence and you're ready for another bite ... or several kekitos more hehe.
The recipe is simple, you just need to find peppermint extract, many super markets and the handling is very cheap. I have not tried using the mint leaves, so do not recommend using anything other than mint extract. Bitumen
Mint:
1 / 4 cup vegetable shortening
2 1/2-3 cups powdered sugar
1 1 / 2 teaspoons peppermint extract
1 / 4 teaspoon vanilla extract
1 / 4 cup soy milk
green food coloring (optional)
Bate butter until smooth. Add 1 cup sugar and mix, add another cup more. If too dry mixture slowly add soy milk and continue mixing, add the extracts and the remaining sugar. Try to adjust the flavors. If you need more sugar, add it to your mixture is the consistency of bitumen. Add green food coloring to your liking.
Put the mixture in refrigerator to avoid melting your kekitos before covering with bitumen.
finished! You can use this frosting to cover kekitos chocolate (my favorite), vanilla, or even to cover cookies.

I just been told that this summer I'll be working again as an intern at PETA, but this time in Washington DC. I'm so excited! The first time was a great experience and I'm sure this time also will be amazing .... and I want to go!
will follow up recipes and of course telling my experience working with PETA as I did last time .... one of the best things about working with PETA this summer I'll be very close to Sticky Fingers, talk about this restaurant a few months ago when I was as an intern, and wow! Delicious. Hahaha .... now I want to learn how to be a better activist, I can not stop saying how excited I am.
I'm in a few days so if anyone has a question on how to participate in PETA's internship program can send an email or leave a comment and we will gladly clarify.

Hi folks!
Today I bring you a recipe that will make them crazy ... when you prepare all your friends will be talking about how delicious it was, and how they could not believe it was vegan.
kekito is a chocolate!! It's super, super delicious vegan ... and this version is easier than any other. You'll love it!
Kekito vegan chocolate! (12):
1 1 / 2 cups flour
1 cup sugar 4 tablespoons cocoa powder 1 teaspoon baking
sodium
1 / 4 teaspoon salt 5 tablespoons oil
1 teaspoon vanilla 1 tablespoon white vinegar 1 cup water
Heat your oven to 165C.
First mix the flour, sugar, cocoa, salt and baking soda. Add vegetable oil, vanilla, vinegar (yes, vinegar!) And water. Mix well. Put in a greased muffin pan or caps and bake for 25-30 minutes. Cool
and go!
are the easiest kekitos the world and have all the flavor. If you do not like the taste of rich chocolate can reduce to 3 tablespoons cocoa.
Do these kekitos, you will not regret it. I prepare for the church and no one could believe they were vegan!

Vegan "Cheese"!! Vegan Spinach and Artichoke
Hola!
Sorry I take so long to upload a new recipe, but I assure you I'm always cooking and thinking about recipes they might like you.
today's recipe is for those who love nachos ... okay, I think we all! There is something super delicious and addictive fried tortillas covered with sauce and top with some few jalapenos.
cheese sauce that I bring today is completely vegan, so it is not really cheese, but it is very, very rich.
Many people put nutritional yeast to vegan cheese sauces, and the truth is that if you give them a taste much like cheese, I do not use it because it is almost impossible to find in Mexico. If anyone knows if they sell in Monterrey tell me please to announce it here. Maybe
ingredients make you rare, but they are super good in this recipe.
"Cheese" Nacho:
1 / 4 cup nuts of India (leave them soaking in water at least 1 hour to soften)
1 / 4 cup oatmeal
3 / 4 cup water 1 teaspoon onion

powder 1 / 4 teaspoon turmeric 1 clove garlic
1 / 2 cup chunky salsa (Herdez type)
salt and pepper to taste
need to soak the nuts, this makes it have a creamy texture. Blend oats until sand, add the nuts from India, and water. Blend in the top. Add spices and garlic. Blend.
Mixture will be slightly yellow by turmeric.
Put the mixture in a saucepan over low heat. And move constantly. The mixture will become thicker. Add the sauce and continue mixing. Test for salt and pepper and ready. Already have your cheese sauce! If you want it thicker still mixing.
Use this sauce for nachos, or veggies. Another delicious way to use it inside a sandwich. I hope you enjoy this simple sauce.
In other news .... I gave a talk about animal experimentation in the PREPA TEC. It was a great success and is always very exciting to see young people motivated to make a change. If you want us to visit your school, let us know and we will gladly go.
